However, July and August full moons are the best times to target Wahoo in Florida, at least on the east coast of Florida. Like most other fish species, the structure, water movement, and season are important to consider when targeting Wahoo. When all three of these conditions align, it will happen favorably, and you will be sure to load your fish box.

Many anglers are successful in July and August, around the full moon, which is 100% due to water movement. During July and August, the moon is the closest to South Florida. 1) Wahoo Fishing in Key West

Anglers fish for wahoo in the Florida Keys because the meat has an exquisite taste; at least to most, it seems different. This fish reaches speeds up to 80 mph and is the fastest fish in the ocean, especially when attacking baitfish. Wahoos in the Keys can reach weights pushing 100lbs. But the average caught fish has just over 30 lbs. It spends much of its life within the deeper dark blue waters of the Gulf Stream Ocean.

The Wahoo may be caught in the Summer Time at sea in the cooler water of the open ocean. From November until February, the water temperature becomes perfect for this available sea predator in the winter months. It appears to be the most enjoyable on both sides of the full moon during the December months. Wahoo and many other fish species can be caught at Key West anytime throughout the year, but in December, only one week in either direction is the best time to encounter the Wahoo in the Florida Keys. The Winter is the best action for Wahoo because the water is warmer, and fish migrate south.

2) Fishing in Miami for Wahoo

Florida’s Atlantic Coast is at times saturated with Wahoo up and down the coast. The migration travels South to North, and when in Miami, they are plentiful. Miami’s city port provides direct access to the Gulf Stream, a deep water channel less than 3 miles offshore. These warm waters are home to many pelagic fish who call these waters home! Although the species is found all year, the best angling action usually occurs from early spring into late summer.

3) Wahoo Fishing in Biloxi

Not always known for its abundance of deepsea fishing, these deep drops offshore of the coast is home to big Wahoo and have become a hotspot. It provides the structure, current, and oasis these fish love to flock to! Even better, they live here all year, sticking close to deepwater rigs and structures anywhere from 10–30 miles from shore. However, the hottest times to cast your line are January through March.

4) Wahoo Fishing in Stuart

Fishing out of the St. Lucie Inlet in Stuart, Florida, is like all ports; it can sometimes be hit or miss. In Stuart, the season is less consistent but available all year round.

The best time of the year can be argumentative; most people would say the summer months of July, August, and September to target Wahoo. But at times, the Winter, October through February, can be impressive. Most Wahoos during the Winter are a bi-catch of fishing for sailfish. If you desire to catch Wahoo during the Winter months, be sure to specify when booking the charter so the crew and make the proper adjustments to target just Wahoo.

During the summer months, high-speed trolling baits and lures are the most effective targeting the Wahoo because they love to ambush its prey, look for them to be hiding around and structure, are down on ledges so they and quickly surprise its next victim. 5) Catch Wahoo in St Augustine

Northeast Florida is known for its deepwater ledges off Jacksonville and St. Augustine coast, approxally 70 miles out, and prime hangout for large Wahoo. This migration of big Wahoo seems to show up between February and March and is fishable for Wahoo from January and April.

Generally, the time of the year when high-speed trolling for Wahoo works. Keep trolling once the fish are located, and the first hookup happens. It’s essential to use 50 series reels or larger ones to hold plenty of fishing lines.

The most success comes from rigging your trolling lines with a sinker. You want to try and keep your lines about 25 to 30 feet below the surface. It has proven that Wahoo like bright colors, and for that reason, a combination of purple and silver and red and black work most all year. This area has one of the largest averages of Wahoo, almost all coming from the ledges. The average size is 40 pounds, and it’s common to encounter fish in the 90-pound range during the season regularly.

How do I Target Wahoo in Florida?

Try placing the Wahoo lures out 150, 250, and 350 feet on the port side and 200, 300, and 450 feet on starboard. In winds and waves, the farther the lures are fed-out, the slows it sinks, and then it speeds up again after cresting the wave. By using six lures, they cover different parts of the ledge at different speeds and depths.

Important, when we are talking about Mahi Mahi fish, we are talking about the Mahi fish, unrelated to the marine mammal bottlenose dolphin. It’s known by most people from their Hawaiian name, Mahi Mahi. But also their Pacific coast name Dorado or Cryphaena Hippurus and better known in Florida and along the US East coast as a dolphin. This amazing fish is hard fighting, good tasting, and a fast-growing renewable ocean resource. One of the fastest-growing fish in the ocean, Mahi or Dolphin have a voracious appetite and is easy to entice to strike slow trolled artificial lures and if hooked and kept near the boat will bring others close by schooling dolphin in for a snack.

Mahi can be found practically worldwide and are a dinner-time favorite everywhere. The southeast coast of Florida and the Keys are some of the best Dolphin fishing waters available. Much like Sailfish, both know for their great dorsal fin and as a pelagic species of Dolphin fish, which means they roam the open ocean. They prefer warmer waters and the prime location for catching Mahi Mahi fish is the Gulfstream along the East Coast of Florida.

Best tactics for catching Mahi

It has always been a great summertime pleasure for me to troll for dolphin fish with artificial lures rigged with frozen ballyhoo. Mahi fish are surface feeders and if you closely watch your trolled baits. In a similar fashion, seeing the dolphin as they beeline in, generally at a right angle to the bait, for a steam roller strike. Also, the Mahi Mahi fish can be very acrobatic when they are hooked also. Providing an angler a good show and thrilling battle. Here’s a catch, I have always found that pink and white or black and red or black and white or the best color choices for artificial lures. When possible, I like a skirt with a flat head that smokes and weaves and wobbles and leaves a bubble trail as it is pulled through the water.

I have trolled as many as six rods at a time with several different colors and styles of artificial lures rigged with ballyhoo. Likewise, the optimum trolling speed is about six knots depending on whether you are going with or against any prevailing currents and winds. Sight fishing plays an important role in dolphin fishing.  Watch for circling birds!  Even one lone bird hanging out in a certain area almost certainly means there is action beneath him.  Look out for schools of flying fish, one of the Mahi fish’s favorite snacks, good sign dolphins are just below.

Dolphins like a cover and you will typically find them around floating debris and weed lines of Sargasso seaweed. Trolling rods in the 30 pound class with matching conventional reels spooled with 25 to 30-pound monofilament lines make a perfect combo for catching dolphins. I personally have caught dolphins on fly rods and reels and found it to be one of the most exciting open ocean challenges there is! Dolphin fishing is a relatively easy relaxing and enjoyable summertime trip that can bring big thrills, lots of fish, and some very good eating. Believe me, Mahi Mahi fish is the easiest blue water fish to catch for the average angler and pays off big time on the dinner table so get out there and perfect your technique!

Ingredients (serves two)

Garlic Butter Dipping Sauce

  • 6 tablespoons butter (unsalted)
  • 3 cloves garlic, chopped
  • 1/2 teaspoon salt

Directions : Prep Time: 10 mins –  Total Time: 25 mins

  1. Cut fillets into 2-inch chunks and drizzle with the lemon juice.
  2. Pour the beer into the bottom of a saucepan. (If using fresh lemon juice, toss the leftover lemon rind in with the beer.) Then place a collapsible vegetable steamer over the beer.
  3. Bring the beer to a boil, place the fish chunks in the steamer. Cover, and steam for 5 to 10 minutes, dependent upon the thickness of the fish.
  4. The fish will be rubbery if it is overcooked.
  5. Meanwhile, heat the butter sauce with the garlic and salt (I heat it slowly until the garlic is no longer raw).
  6. Remove the fish from the steamer and discard the beer/liquid/rind.
  7. Serve the fish chunks with the garlic butter dipping sauce and your favorite sides.

Ginger Glazed Mahi Mahi Recipe Catching and Preparing Mahi Mahi

Bursting with flavor and combines both sweet and sour taste sensations. The 30 minute prep time includes 20 minutes to marinate. This recipe is a snap and so delicious. You’ll love it!

Ingredients

  • Honey 3 tablespoons
  • Soy sauce 3 tablespoons
  • Balsamic vinegar 3 tablespoons
  • 1 teaspoon grated fresh ginger root
  • 1 clove garlic, crushed or to taste
  • 2 teaspoons olive oil
  • 4 (6 ounces) Mahi Mahi fillets
  • salt and pepper to taste
  • 1 tablespoon vegetable oil

Directions

  1. In a shallow glass dish, stir together the honey, soy sauce, balsamic vinegar, ginger, garlic, and olive oil. Season fish fillets with salt and pepper, and place them into the dish. If the fillets have skin on them, place them skin side down. Cover, and refrigerate for 20 minutes to marinate.
  2. Heat vegetable oil in a large skillet over medium-high heat. Remove fish from the dish, and reserve marinade. In addition, fry fish for 4 to 6 minutes on each side. Equally turning only once, until fish flakes easily with a fork. Remove fillets to a serving platter and keep warm.
  3. Also, pour reserved marinade into the skillet, and heat over medium heat until the mixture reduces to a glaze consistently. Spoon glaze over fish, and serve immediately with your favorite side.

What’s best served with this dish?

I love an Asian Instant Brown Rice, as it goes so well with most meals and is healthy yet easy.  For a skillet rice dish, a Rice Pilaf with mushrooms is a fantastic choice.

What about the veggies? I really like Lemon Dill dressing with Spinach or Mediterranean Salad for some greens and make it a full meal. Additionally, a nice serving of Roasted Vegetablesgoes very well and makes an amazing and simple dinner as well.

Purchasing Mahi Mahi Fish if you can’t catch it?

Mahi-mahi at restaurants is almost always sold as skinless fillets and is generally considered sustainable seafood. If you can’t find it fresh in your local market, check the frozen seafood section, which may sell them as individually frozen fillets. Megastores like BJ’s and Costco sell packs of frozen fillets. If you can’t find Mahi Mahi, look for a halibut, swordfish, or snapper which are meaty white fish as an alternative.

Hank Brown, revered as one of the best light-tackle fishing guides to ever prowl the flats of Islamorada and the Florida Bay backcountry, died late Monday. He was 86.

Capt. Brown’s list of happy anglers includes former President George H.W. Bush, First Lady Barbara Bush and former Islamorada resident Ted Williams, who also played a little baseball with the Red Sox.

“Hank was a great tarpon fisherman, one of the best ever in my opinion,” said Charlie Causey, an Islamorada angler who won the prestigious Don Hawley Invitational Tarpon Tournament in 1986 with Brown at the helm.

“Work ethic got him where he was, but being a great guide is more than just experience,” Causey said. “To be really good, you need a feel for the fish. And Hank could feel the fish in his bones.”

The Hawley was the first major tarpon tournament to require releases, a position strongly supported by Capt. Brown.

He was considered among Islamorada’s elite fishing guides, coveted by anglers as their skipper for limited-entry fly-fishing contests. Capt. Brown often is ranked among Keys fishing legends Jimmy Albright, Billy Pate, Cecil Keith and Eddie Wightman.

“Hank was a fishing pioneer and a legend,” said Mike Forster, Mangrove Mike’s restaurant owner who considers Capt. Brown “my Keys father, mentor and friend.”

“He was a great all-around guy who made time for everybody, especially children,” Forster said. “On his charters, he’d help people get fish and also teach them about preserving the Keys resources.”

A Maryland native, Capt. Brown left the business world to devote full-time to his fishing career that lasted for four decades. In 1982, he started selling his Hook Up lures, jigs specially designed for light tackle on flats and “skinny water.” The business continues under owners who sell the popular line of Capt. Hank Brown’s Hook Up Lures.

Capt. Brown’s willingness to explore new waters of Florida Bay and chase fish anywhere earned him the good-natured moniker of Run Aground Brown.

He was a longtime member and officer of the associations that worked on behalf of fishing guides and protection of the local waters.

“It takes a long time to be considered a top guide, and Hank Brown was,” Causey said. “Hank had a great sense of humor and it was great to be in a boat with him. But when it came time to fish, he was all business and expected you to do the things that needed to be done.”

Hank Brown is survived by wife Joy, son Michael and daughter Michele. Details of a memorial service will be announced.
